I’m not so keen on vegetable juices, other than carrot, but almost any combination of fruits works. You can even use fruit that’s starting to go a bit soft, so long as it’s not mouldy.

A basic favourite in our family is simple apple juice. For two people, you need about four or five medium sized apples. Wash them well, then cut in half and remove the stalk. No need to core or peel. Just cut into suitable sized chunks, and put in the juicer. It’s best if you have a little lemon juice or vitamin C powder in the jug where you’re catching the juice, to stop the juice going brown, and perhaps some ice cubes to keep it cold. Serve immediately - fresh juice doesn’t keep well.

Other good combinations based on apples: three apples and two pears; four apples and a handful of strawberries; three apples and a carrot.

I find that soft fruit (peaches etc) doesn’t make such good juice, although you can try - they tend to be better made into smoothies. But if you juice a couple of apples to add to them, they’re much better than using commercial juice.

The most important thing is to keep fresh juices cold, and serve them immediately.

A great book with lots of ideas is ‘The Big book of juices and smoothies’ by Natalie Savona.
