International Food Safety & Quality Network Discusses Fruit Beverage Manufacturing

Thomas Cutler asked:

According to Evan Garber, President of EVS (www.evs-sw.com), “Many times a customer will have specifications for a juice that is different than the company’s specification for the product…the company manufacturers orange juice with between 30-40% solids, a client may require that the orange juice that they get be 37%-40% solids. ERP solutions must allow a fruit beverage company to manufacture to the company’s specification, the customer’s specification or when picking for a sales order, perform a “best-fit” of existing products to meet the customer’s requirement.”

In the feature entitled, Technology Solutions in Fruit Beverage Manufacture, Escape Velocity Systems (www.evs-sw.com) is profiled. In the current issue of International Food Safety and Quality Network, the article by manufacturing journalist TR Cutler, the author notes that, “In the citrus industry most juicers do not purchase pounds, gallons, tons of fruit; they purchase “pound solids.” Essentially juicers are purchasing the sugar that is in the fruit, not the water content. Sometimes a trailer of oranges can be 5,000 pound solids; sometime the same volume can be 4,000 pound solids if the fruit has more water and less sugar. The difficulty is they will issue the fruit into a batch by weight or volume; The relationship from pound solids to weight or volume is not a linear relationship – therefore the technology solution must have the capacity to facilitate multiple, non-related units of measure on a lot basis. The O2 system is one of the very few technologies which provide this capability for juicers.

The entire article may be read at http://www.ifsqn.com/articles_detail.php?newsdesk_id=388&osCsid=44a69b8813db8bfc9184638cf09896d2.

Some juice manufacturers make Kosher and Halal beverage products. Garber suggested, “Any technology solution must indicate whether a formula is Kosher or Halal. O2 is one of the few batch or recipe process manufacturing ERP systems which allow a user to indicate formulas that are Kosher or Halal. Whether Muslim in the case of Halal certification or a Rabbi in the case of Kosher certification, both will typically review formulations as well as historical production to verify that kosher products have been used. The ability to print and view all formulas and ingredients that have a designation (Kosher or Halal) is vital and must be true of historical production batches.”

Other ERP functionality for these two designations include the requirement of “source of ingredients” because of the direct relationship to lot tracking of raw materials from procurement through production to finished goods. The requirement of “status of production equipment” relates to machines that only run kosher or halal items (given the cleaning specification of both food designations). Garber noted, “Production planning (finite capacity) rules can be set to state that a section of formulas (kosher or halal, in this case) are only run on certain machines. If a planner tries to run on another line, the schedule board will prohibit it from moving. Production history can be updated for the machine indicating that a batch was actually run and received the required verification that batches were run on proper equipment. Indicators that the needed blessing has been made to a particular batch, item, or lot can be indicated.”

Escape Velocity Systems (EVS) was formed in 2001 to combine specific industry knowledge related to process manufacturing, distribution, and ERP implementations with cutting edge software development. The company focus is to create tools that enable mid-market enterprises to achieve their goals, focusing on lean processes and ROI.

A Look at Some of the Recipes for Preparing Elderberry Wine

September 24th, 2008

Muna wa Wanjiru asked:

The earliest known production of wine Georgia and Iran. For a long time now wine has been made from natural fermentation of grape vine juice. Today, there are other different types of wines made from different fruit juices. Some of the most famous being the apple juice wine, elderberry wine, barley wine and rice wine. All these ingrediants for making wine have naturally occuring starch, enzymes and other nutrients. The grapes harvested from farms in South Africa, California, and Greece are crushed and then fermented with yeast. Yeast helps in converting the sugars found in these fruits into alcohol.

Included in the category of fermented alcoholic drinks, elderberry wine is one of the most well flavored fruit liquor produced at home or in industrial conditions. Fruit wine is often preferred to the traditional type of beverage due to the lower alcohol concentration in the structure, not to mention that it is sweeter and more juice-like than any other beverage of the kind. Together with strawberries, elderberries are some of the few fruits that have all the right amounts of natural substances to create a respectable and tasty wine. Elderberry wine contains acid, sugar and tannin that allow a natural and rapid fermentation.

The elderberry wine is made from the fruits of a shrub that produces blue and black berries; it usually grows in the wild and the right time for the making of this liquor is in mid summer. Elderberry wine is very well flavored and its aroma is directly connected to the area where it grows: moist land, rich soil, particularly on river banks and pastures. It is the juice of these fruit that makes the right ingredient for the elderberry wine, being also used to make jelly for instance. Do not cook the elderberries, they need to be raw in order to make the perfect wine.

There are plenty of recipes for preparing elderberry wine: some of them recommend the use of fresh fruit some others rely on dried elderberries. The color of the wine as such can be enhanced if you place the wine vessel into a dark room during the fermentation process; even afterwards when the elderberry wine is ready, always store it in dark bottles and in dark places in order to preserve its qualities. When you pour such a wine in your glass, you’ll be truly delighted with the result as it appeals to the senses through the visual impact, the smell and finally the taste.

The fruits you use for the elderberry wine need to be completely clean and have the stems removed, afterwards wash them with fresh water and mash them wearing rubber gloves. Elderberry wine usually requires the use of a certain amount of sugar, as the fruit are pretty sour; in order to do things properly, always follow a recipe so as to make sure all the necessary steps are taken. The making process can take up to at least two months, and during this period of time you’d have to take care of the elderberry wine progressively and persistently. However, the effort is worth making; enjoy it!

Grandma Was Always Right

September 11th, 2008
fruit juicer recipes
Hamza Davis asked:

Grandma was always right when it came to home remedies. While these remedies are not a replacement for medical attention, you should always seek your doctor when you feel you have to and please take these home remedies with a grain of salt. Here you go and enjoy.

Acne and Blackheads

Rub the acne area with a fresh garlic clove.

Drink at the very least 8 8oz glasses of water a day. Even more in the summer.

Mix one part of cinnamon into 3 parts of honey.Use as a scrub.

Dab a modest amount of toothpaste (paste, not gel) on pimples before bed; this helps dry out the pimples.

Pour a little salt into a modest bowl, add a straggling drops of water and mix till it turns into a paste. I’ve heard using a little toothpaste (paste, not gel) to this mix gives it a little supplemental kick. Use this recipe to exfoliate. Do not leave on overnight. Wash your face and rinse off.

Baking Soda as an exfoliate

Vitamin E gel tabs. Use as a ****** moisturizer.

Honey and oatmeal as a ****** scrub and exfoliate.

Dark Circles Around Eyes

Cucumber slice. Cover eyes with cucumber slices for 15 minutes.

Potato slice. Cover eyes with Potato slices. For 15 minutes.

Lead a healthier life style. Get plenty of sleep, water and Juice Plus wouldn’t hurt.

Make a paste out of 1 tsp. tomato juice, 1/2 tsp. pineapple juice and 1 tsp. of flour. Apply around eyes. Leave on for 10 minutes before rinsing.

Moisturize with extraneous virgin olive oil or vitamin E.

Try used Chamomile tea bags (cool bags) over eyes for 15 minutes.

Energizer

Try eating an apple or 2

Mix 1 tomato, 1 orange, 1 clove of garlic. For greatest results, use a juicer.

Aloe Vera Juice. One of natures greatest detoxifiers.

Gum In Hair

There a straggling of these. Here they are:

Try using baby oil

Try peanut butter

Non stick cooking spray

Ice

A mixture of baking soda with water. Rub it in hair, brush it out.

Mosquito Bites

A paste of baking soda and water.

Aspirin capsule. Works well with bee stings. But for bee stings, try to remove the stinger.

Use calamine lotion.

Hangover

There seems to be a lot of these also but I could tell you what I used to do for a hangover. I am not suggesting you try it but it worked for me.

Elementary off, you wake up with a sour stomach and massive headache.

Alcohol dehydrates, so its time to replenish your body with water. Try a glass of water with one tablespoon of sugar. Water to rehydrate, sugar for the sour feeling in your gut. Sometimes I will take something for the headache. Aspirin or Advil whatever you desiderate.

Next, ice-bag for my head. I used to stick my head under cold running water in the laundry sink.

When your stomach is settled down a bit, and depending on how your feeling, time for breakfast.

Bad Breath

Try some parsley. This food garnish is rich in chlorophyll, a green plant compound that kills the bacteria that basis bad breath.

Use the juice of half a lemon, one teaspoon of salt. Gargle.

Brush your teeth with a couple pinches of baking soda. When done, brush again with normal toothpaste (optional).

I’m sure this is the tip of the iceberg, but these are the ones I know of. These home remedies are in no way a replacement to a Doctors care so if you feel that you might need to see a Physician, please do so.

Super Juices are They Killers ?

September 10th, 2008
fruit juices
Dr Robin Rushlo asked:

(c) 2008 Soaring Eagle Companies LLC

I quit drinking all the super juices out there. I was having blood sugar problems. Then I read this report. I am no longer a Juice person. You better stop too.

The report, FRUIT JUICE DRINKS TIED TO DIABETES: American Diabetes Association Ties Fruit Juices to Diabetes was published in NUTRITION NEWS, Issue 105, July 24, 2008.

The report starts with the following:

Surprising new research has shown that fruit juice drinks greatly increase the risk of type 2 diabetes.”

“Stay away from fruit juice drinks” was the message delivered in relation to the study published by the American Diabetes Association (ADA).

The American Diabetes Association (ADA) published the results of a study of over 4,500 people to help determine factors associated with the risk of diabetes. Researchers found that: “An additional daily serving of fruit juice increased the likelihood of developing diabetes by 18 percent”

Juices have the potential to cause harm. If you promote juices it is very important that you tell people about this possible risk and that you ask them about their medical problems.

To quote further in the report:

In response to the ADA publication, diabetes researchers stated, “This is a significant finding, particularly because of the large subject pool studied, and the high rate of risk linking fruit juice drinks and diabetes risk.”

The most popular new designer fruit juice drinks are made from a variety of fruits, including Noni, Goji, Mangosteen, Acai, Amalaki, and Jujube. Carry the risk of increasing obesity and type 2 diabetes due to their glycemic response, Cephalic response (CPIR), and fat-storing response, when you use all these fruits, as well as any other fruit, and their juices.

Juice includes all the “SUPER JUICES”. As we read further:

Fruits in a liquid, juiced state have very different obesity and diabetic risk factors than actual raw fruit. You change the nature of a fruit, altering its metabolic actions when you juice it. Low Glycemic raw fruits may be consumed in moderation, but juiced fruits should be avoided.

This is especially true in children, as adipose tissue fat cells can be triggered to increase in size and amount during childhood. The message to human fat cells to become larger and more abundant, leading to higher incidence of obesity and diabetes, this comes from Juicing fruit and drinking it.

These types of fat cells cannot be removed once they are created, thus triggering adipose tissue fat cells in childhood is a sure way to create an obese and/or diabetic adult. Dieting becomes an extreme challenge once a child has developed too many fat cells, as fat cells can only be flattened but not reduced in number. Adults who find that diets don’t work; can blame the excess plethora of fat cells that were created in childhood.

This is the kicker and needs to be watched.

Then in the report it says:

Designer fruit juices became popular due to their high-ORAC values. ORAC stands for Oxygen Radical Absorbance Capacity, as related to the Free Radical Theory of Aging. Many fruits carry photochemical benefits, but researchers caution that “The benefits of high-ORAC fruits do not overcome the high risk of obesity and diabetes associated with ingestion of fruit juices. High-ORAC antioxidants can be found in spices, berries, and legumes.

A summary of the report is as follows:

SUMMARY In order to legally define or state the propensity of a specific fruit juice to elevate obesity, diabetes, and fat-storage risks in human, human In-Vivo clinical trials are required. These trials should be designed to determine glycemic response (per FDA 21 CFR Guidelines), Cephalic (Brain-Glycemic-indexing) Response, and Adipose Tissue Fat-Storage.

The research was done by the following:

The Glycemic Research Institute has received Certification by the federal governments in the United States, Canada, and United Kingdom to conduct these approved trials, and has a 25-year history of FDA & FTC claims substantiation.

Omega 9000 Juicer - Great Features for a Great Price

September 10th, 2008
fruit juicers
Alien asked:

Omega 9000 juicer is high quality juicer that will make juices at home using fresh fruits and vegetables and easy task.

Some important features of this stainless steel Omega juicer that make it one of the most reliable, efficient, robust and durable juicers around are summarized below:

Powerful Yet Silent Motor: Omega 9000 juicers are equipped with the time-tested 250 W, 3600 rpm, induction-type GE motor. The absence of many moving parts that rub against each other makes this motor extremely durable.

The powerful motor makes juice extraction very efficient, resulting in 20–30% more juice than with other juicers.

Stainless Steel Components: Heavy-gauge surgical stainless steel is used for the steel components, which are either polished or sandblasted to make the unit look attractive as well as easy to clean.

For example, the large-capacity and easy-to-clean stainless steel bowl is polished on the outside to give it a mirror finish and sandblasted on the inside.

Tough Stainless Steel Blade: The tough stainless steel blade grinds all kinds of fruits and vegetables with equal ease, without wear and tear for long time to come. A small knob, called the spring clutch nut, holds the blade in place and allows it to stay afloat, as does a small plastic ring near the blade edge on the underside.

The motor is, therefore, able to maintain its speed even when you push down on your fruits/vegetables, making Omega 9000 juicer run virtually vibration-free for all kinds of juices.

Pulp-Free Juice: If you prefer to drink your juice without pulp, then use the non-bleached cellulose fiber filters that come with Omega 9000 as an option.

You get truly pulp-free juice with these filters, while also making the cleaning of the unit very easy. A large feed chute allows large pieces of fruits/vegetables to be pushed down for squeezing juice without compromising on motor speed.

Vibration-Free Running: Other features that aid vibration-free juicing action of Omega 9000 Juicer are:

* a dozen or so evenly spaced but variable in height rubber feet, which help prevent the unit from vibrating and “walking across” your kitchen countertop

* a large, perfectly hand-balanced basket that spins vibration-free

Easy Assembly: The cantilever-style latch arms make assembling/disassembling of the unit so simple and hassle-free that you would want to use your Omega 9000 Juicer on a daily basis.

No more excuses for avoiding making fruit/vegetable juices for your family! In fact, you can even convert it to a citrus juicer using an optional citrus press attachment.

These features, backed with a solid 15-year warranty period, international models and prompt customer service, have earned Omega 9000 model a 4-star (out of 5) customer rating.

So what are you waiting for? Get your Omega 9000 Juicer fast and drink your way to health with freshly squeezed fruit/vegetable juices.

pdot asked:

So, basically I’m a health freak. I’m 18. I exercise reguarly (4-5 times a week) and I ration my meals to control carbs, calories, and ensure I have enough dairy, vegetables and fruits and the whole deal, but I don’t know if I’m doing it right. Here is a typical day.

Breakfast: A smoothie consisting of
1 cup of milk
1 Package of “Nestle breakfast anytime” smoothie mix, which has a huge list of impressive nutritional benefits
A small piece of flavoured silken tofu (50 calories)
3 servings of frozen fruit (banana, mangoe, and usually a berry serving)
A pinch of flax seed

Snack: 1 Serving fruit/vegetable

Lunch:
1 serving of Whole wheat/multigrain bread/pita with a tbsp of Hazelnut spread
1 serving of cheese/yogurt

Snack: An espresso with a pastry type snack which is 220 calories or less

Dinner: 1 serving whole wheat cous-cous with at least 3 vegetables

I also drink a lot of water, and may nibble on dried peas or almonds in between
Am I doing anything wrong?
I forgot to mention with dinner I may have a porkchop or chicken or somehthing
Is this enough protein?
I am also concerned that if I am not eating enough, and I start to eat more I will gain. “Judy” in the second answer, (much appreciated) said that I should increase my intake to be healthy, but will I experience an increase?

Top 3 Manual Wheatgrass Juicer Models

September 9th, 2008
fruit juicers
Alien asked:

When you are looking for a good quality manual wheatgrass juicer, there are several on the market to choose from.

Manual wheatgrass models have several benefits versus electric wheatgrass juicers. Unlike electric models, manual juicers require no electricity to operate, just a little elbow grease.

And contrary to electric juicers, you can also feed the pulp back through the juicer to extract as much juice as possible, which saves you money by letting you get the most out of your wheatgrass.

Keep in mind that wheatgrass juicers, whether electric or manual, can truly only handle wheatgrass delicate greens, and sometimes soft fruits. They are not built to juice firm vegetables or fruits such as carrots or apples. Some top models and features include:

Healthy Juicer - Manual Hand Powered Wheatgrass Juicer

Healthy Juicer is a masticating rather than centrifugal juicer. A masticating wheatgrass juicer is preferable to a centrifugal wheatgrass juicer because it crushes greens to extract the juice rather than shredding them.

Masticating helps preserve nutrients and enzymes from the juice because it minimizes heat build up. It also extracts more juice than using centrifugal force to extract the juice.

The juicer itself is about a fourth the price of most electric juicers, or about $50. It assembles easily, and parts are easily replaceable simply by going on the website or calling the company.

It weighs a mere four pounds and its footprint is also smaller than most, so it will take up less space than most juicers.

The only caveat (as with most wheatgrass juicers) is that one should not attempt to juice heavy or hardy fruits and vegetables such as carrots or apples with it.

For that, choose a sturdier model not specifically manufactured for wheatgrass and greens juicing. (It should be noted that it does do a very good job juicing citrus fruits, however.

Back to Basics Stainless Steel Manual Wheat Grass Juicer

Back to Basics’ juicer is arguably the most popular wheatgrass juicer on the market. Although a bit pricier than the Healthy Juicer at about $80, it is completely made of stainless steel and comes with a five-year warranty.

It clamps to your tabletop for firm hold. It can puree or juice wheat grass and soft fruits (including citrus). It is easy to clean and resists rusting.

Hurricane Stainless Steel Manual Wheatgrass Juicer

This Hurricane Juicer is made of sturdy stainless steel that will never rust. It disassembles into just a few parts so that it is easy to clean and reassemble.

Although the priciest of the three models reviewed here at about $110 not including shipping, its design, ease of use, and sturdy construction make it worth the extra cost. It also has a five-year manufacturer’s warranty included.
